I finished my last training sesh before this weekends upcoming race and first I thought *is today Wednesday or Thursday* πŸ˜‚, It’s Thursday, so that means it’s my last day to train before 2 days of rest. Then my second thought was *holy macaroni I need PROTEIN* πŸ’ͺ Gosh darn I ate two of these then proceeded to have a shake just to make sure I got it all in there. Tuscan Kale Soup. πŸ‚πŸƒπŸŒΎ It’s pouring rain today β˜”οΈ so I’m making soup and laughing, no crying, to Office Space playing on my laptop πŸ˜‚ this movie is hilllaaarrious! I think later I may change up my pace and put on the Harry Potter series πŸ‘“βš‘οΈWhat are you up to today!?

Recipe for this awesome soup:
2 tbsp Olive Oil
1 Onion, chopped
3 Clives of Garlic, minced
2 c Kidney Beans, already cooked
Carrots, Celery, Tomatoes, & Kale
6 c Vegetable Broth
1 tsp Thyme, dried


Directions:
1. Heat pan & oil. 2. Add onion and garlic. 3. Add all other ingredients. Bring to boil. 4. Cook until carrots are soft. Enjoy!

Okay so I’ve been a bit of a cookie fanatic lately πŸ™ŠπŸͺ These chocolate chip cookies are crumbly and there is nothing I enjoy more than making a mess 😜

Here is the recipe:
- 2 c Gluten Free Flour (I used oat)
- 1/4 c Organic Sugar
- 1/2 c Organic Brown Sugar
- 1/2 c Vegan Butter (I used No Oil Earth Balance)
- 2 tbsp Flax (Mix in 3 tbsp Water)
- 1/2 tsp Baking Soda
- Pinch of Salt
- 1/2 tsp Cinnamon
- Dark Choco Chips

Directions:
1⃣ Mix vegan butter with sugar.
2⃣ Mix in all other ingredients.
3⃣ Bake at 350 deg for 15 - 25 minutes.
*I used food processor to mix, but beaters would work as well.
