Pumpkin Seed Peach Crisp 😊 Single serving bite sizes 🙏 you know when someone casually mentions something you’re completely obsessed with and it takes every frigin ounce of your self control not to propel yourself into the stars and scream for the rest of eternity about how much you love the thing. That’s how I feel about peaches 🍑🍑🍑 Frankly, it’s one of my better obsessions 😜 what are you mad for??? Tell me.. I wanna know 😍

Not just a salad. More like an explosion 💥 of delightfulness. Grilled Sundried tomatoes, onion, avocado, celery, and a sweet maple-syrup balsamic 😋 all landed so perfectly on a bed of mixed greens 😅. I’m a little surprised at myself today, as this meal is rather ‘light’ for me to enjoy after the 6km sprint I managed. This was my attempt to mix up my regular runs, and whew, let me tell you, it was so intense I cannot feel my legs 🙈. Perhaps I will make those oat brownies later tonight too 😏. Ahhh food is my life!

Snack time all the time 🙊 Soaked oats with loads of cinnamon, pear, and almonds. Then, just to make things interesting, I paired this with blueberry tea.. I know - ok not that exciting.. At the time though, I couldn’t get enough of it 😍 let the ordinary fascinate you right?!

Today I thought it would be fun to spend 6 hours dehydrating pecans 😓 Well it turns out that you need to SOAK them first 💦 geez.. I ended up soaking my nuts and re-dehydrating them and ohhhhhh MY they were SO TASTY 😍 like a crisp pecan pie 👌 Then I mixed my chopped kale with pumpkin seed oil.. Basically liquid gold 🙏 such a holy oil those pumpkins make. Throw on them pecans, more pumpkin seeds, and squeeze of fresh lemon 🍋 Served with chamomile tea and yep that pretty much sums up my day 😅

Addictive little shits 😖😍 I was slowly dying trying to figure out the best way to use up my fresh beet pickings from yesterday - it’s been a one year relationship between this delightful vegetable and I 💁 and let me tell you - these purply pink beauties are unreal 😍 I’m getting a sugar rush just thinking about it. Or maybe that’s from eating all of em in a single shot 🙊 Beetroot Lemon Macaroons of life is what I call them. I thought maybe after running 8km in this crazy humid weather I would have a couple then save the rest for the bike ride I’m planning later but ohhhh noooooo 🙈 they’re gone. Yep. Literally taste like heaven on earth. ➡️ Ingredients: coconut into coconut butter, maple syrup, lemon, beets, pinch of sea salt, more coconut. Mix mix mix mix. Roll into balls. Dehydrate. Full recipe will be posted shortly once I calm down. 😅
